- 1Brown beef and onion in a large lidded skillet over medium-high for 6 minutes. Drain excess fat.
- 2Add bell pepper and cook 3 minutes. Stir in garlic, tomato paste, paprika, and cumin for 1 minute.
- 3Stir in rice and broth. Bring to a simmer, cover, reduce heat to low, and cook 18 minutes without lifting the lid.
- 4Scatter corn over the rice, cover again, and cook 5 minutes more.
- 5Remove from heat and rest covered for 10 minutes. Fluff, season, and finish with scallions.
