There's hot chocolate from a packet, and then there's this — thick enough to coat the back of a spoon, so rich you sip it slowly. Once you make it with real chopped chocolate, the powder packets start to taste like a memory of chocolate rather than the real thing.
The base is a little cornstarch whisked into cold milk before heating. It's the secret to that luscious, slightly thick texture that European cafés serve — not a gimmick, just the difference between a drink and an experience.
Warm the milk gently and never let it boil, or it can scorch and turn grainy. Low and patient gives you silk. Top with whipped cream and a dusting of cocoa, and find the coziest chair in the house.
The method behind the meal
Why this recipe works
- •Use good chopped chocolate, not chips — chips have stabilizers that resist melting.
- •A tiny pinch of salt and splash of vanilla make the chocolate taste deeper.
- •For extra decadence, use half milk and half cream.
