If I could only keep one dessert recipe forever, it would be this one. Browning the butter takes an extra five minutes and completely changes the cookie — it adds a nutty, toffee depth that tastes like you know a secret. Because you do now.

The real secret, though, is patience: chill the dough. I know, I know. But warm dough spreads into thin, greasy cookies, while chilled dough bakes up thick with those crackly tops and gooey centers everyone fights over.

Pull them out when the centers still look slightly underdone. They keep cooking on the hot tray, and that's how you get the chewy middle instead of a crunchy hockey puck.

The method behind the meal

Why this recipe works

  • Let the browned butter cool until just warm, or it'll melt the sugars and thin the dough.
  • Chop a chocolate bar instead of using chips for melty puddles throughout.
  • A flaky salt finish on top is non-negotiable in my kitchen.

Instructions

  1. 1Melt the butter in a light-colored pan over medium heat, swirling, until it foams and turns golden with brown flecks and a nutty smell. Pour into a bowl and cool 15 minutes.
  2. 2Whisk the browned butter with both sugars, then beat in the eggs and vanilla until glossy.
  3. 3Stir in the flour, baking soda and salt just until combined, then fold in the chocolate.
  4. 4Chill the dough at least 30 minutes (up to overnight).
  5. 5Heat the oven to 375°F (190°C). Scoop dough onto lined trays, spacing well.
  6. 6Bake 10–12 minutes until the edges are set but centers look soft. Finish with flaky salt and cool on the tray 5 minutes.
