- 1Brown sausage and onion in a wide pot over medium-high for 7 minutes, breaking the meat into small pieces.
- 2Add garlic and tomato paste and cook for 1 minute.
- 3Stir in broth, tomatoes, and penne. Bring to a simmer, cover loosely, and reduce heat.
- 4Cook 12–14 minutes, stirring every few minutes, until pasta is tender.
- 5Remove from heat. Stir in cream, spinach, and parmesan; rest 3 minutes before serving.
