Honey Garlic Chicken

This is my answer to the night everyone wants takeout but dinner still needs to happen quickly. The sauce uses enough honey to turn glossy and caramel-like, balanced with soy sauce and rice vinegar so it never becomes candy-sweet.
Give the chicken room to brown. If the pieces are crowded they steam and the sauce has nothing flavorful to cling to. Use a wide skillet or brown in two batches, then bring everything together for the final two-minute glaze.
Mia's tips
- •Cut chicken into equal pieces for even cooking.
- •Keep the heat moderate once honey is added because it can burn.
- •For a thicker glaze, simmer uncovered for one extra minute rather than adding more starch.
