- 1Heat the oven to 350°F (175°C). Grease two 8-inch round pans and line the bottoms with parchment.
- 2Whisk flour, baking powder, and salt in a medium bowl. In a second bowl, beat softened butter, oil, and sugar for 3 minutes until pale and fluffy.
- 3Beat in eggs one at a time, then mix in vanilla and sour cream. Scrape the bowl so no dense butter remains at the bottom.
- 4Add the flour mixture in three additions, alternating with milk. Mix on low only until the batter is smooth and no dry flour remains.
- 5Divide batter evenly between the pans. Bake for 27–32 minutes, until the centers spring back and a tester has a few moist crumbs.
- 6Cool in the pans for 15 minutes, then turn onto a rack and cool completely.
- 7For the buttercream, beat butter for 2 minutes. Add powdered sugar gradually, then vanilla, salt, and enough milk for a smooth spreadable texture.
- 8Level the cooled layers if needed. Fill, stack, and frost the cake, then let it stand 20 minutes before slicing.
