Nachos are less a recipe than a philosophy, and my philosophy is: no naked chips. The tragedy of most nachos is a beautiful cheesy top layer sitting on a pile of bare chips underneath. We're not doing that here.

The fix is layering. Chips, beef, cheese — then a second round of chips, beef, cheese. Every chip gets its fair share, so there's no sad dry corner and no fighting over the good ones in the middle.

And every cold, fresh topping goes on after baking, never before: guacamole, sour cream, pico, jalapeños. Baking them just makes everything sad and warm-wet. Hot, melty base; cool, bright toppings. That contrast is the whole point.

  1. 1Heat the oven to 400°F (200°C). Brown the beef with the taco seasoning and a splash of water, 6–8 minutes.
  2. 2Spread half the chips on a sheet pan. Scatter over half the beef, beans and cheese.
  3. 3Add a second layer of chips, beef, beans and the rest of the cheese.
  4. 4Bake 8–10 minutes until the cheese is fully melted and bubbling.
  5. 5Top with guacamole, sour cream, pico and jalapeños. Serve immediately, straight from the pan.
