Golden Buttermilk Waffles

A good waffle is a study in contrast: crackly, deeply golden edges giving way to a soft, almost custardy middle. Boxed mix can't touch it, and the from-scratch batter takes about the same ten minutes you'd spend hunting for the box anyway.
Buttermilk is the quiet hero — its acidity makes the inside tender and gives the outside that lacy crisp. No buttermilk? Stir a tablespoon of lemon juice into a cup of milk and let it sit five minutes; it curdles into a perfect stand-in.
Two rules I never break: don't overmix (lumpy batter, tender waffles), and don't stack the finished waffles — they steam themselves soggy. Keep them crisp in a low oven directly on the rack while you cook the rest.

- 1Heat your waffle iron. Whisk the flour, sugar, baking powder, baking soda and salt together.
- 2In another bowl, whisk the buttermilk, eggs, melted butter and vanilla.
- 3Pour the wet into the dry and stir just until combined. Rest 5 minutes.
- 4Cook scoops of batter in the iron until deeply golden and crisp, about 4–5 minutes each.
- 5Hold finished waffles on a rack in a low oven and serve with syrup and butter.
